To get started, gather the required ingredients, which include:
- 3 cloves minced garlic
- 1 tbsp. olive oil
- 1 diced onion
- ½ tsp. dried basil
- ½ tsp. dried oregano
- 1 bay leaf
- 4 cups chicken broth
- 1 (9-oz) pkg. refrigerated three cheese tortellini
- 2 tbsp. grated Parmesan cheese
- 3 c. chopped baby spinach
- Salt and pepper to taste
To make this soup, heat the olive oil in a Dutch oven or large stockpot. Add the onion and garlic, stir frequently, for two to three minutes. Whisk in the chicken broth, 1 c. water, bay leaf, oregano, basil, diced tomatoes, and tortellini.
Boil the mixture, reduce the heat and then simmer until your tortellini is cooked through. This takes five to six minutes on average. Stir in the spinach and allow it to heat until it begins to wilt. Serve immediately with parmesan cheese.
2. Honey Garlic Shrimp and Broccoli
While any veggie and protein combo make for a healthy dinner, broccoli and shrimp together is just what your taste buds ordered. This recipe is quick, easy, and best of all, full of flavor. What’s even better is that broccoli has gut-healing abilities.
The ingredients you need for this recipe include:
- 1 lb. shrimp deveined and peeled
- 1 tbsp. oil
- 1 c. broccoli florets – fresh or frozen
To make the sauce, you will use the following ingredients:
- 3 tbsp. soy sauce
- 4 tbsp. honey
- ½ tsp. ginger minced
- 1 tsp. garlic minced
Place your broccoli florets in a small bowl and fill it with several teaspoons of water. Place the bowl in the microwave for two minutes to let the broccoli steam. Combine the ingredients for the sauce and divide it into two portions.
Marinate your shrimp with half of the sauce for about 10 minutes (make sure to discard this marinade). Heat a skillet and add the oil to the pan and then add the shrimp until browned – about one minute per side. Add the shrimp back into the pan with the broccoli. Cover with the remaining sauce and mix well.
